oatmeal raisin cookies recipe
INGREDIENTS:
- 1 mashed banana
- 1/3 cup maple syrup
- 1/3 cup coconut oil (melted or olive oil)
- 1 flax egg
- 1 teaspoon of vanilla extract
- 1/2 cup oat flour
- 2 tablespoons wheat bran, wheat germ, or almond meal
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup rolled oats
- 2 tablespoons of ground flax seeds
- 1/2 cup raisins
DIRECTIONS:
- Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
- Combine wet ingredients and dry ingredients (except flax seeds, oats, and raisins) in two separate bowls.
- Pour dry ingredients into wet ingredients. Combine and add in flax seeds, oats, & raisins.
- Scoop cookie batter onto the baking sheet (2-3 tbs dollops) and place them 2 inches apart.
- Bake for 10-12 minutes until lightly brown on the edges. Allow sitting on the baking pan for 5-10 mins before removing them to cool.
