FUDGY BLACK BEAN BROWNIES
Ingredients:
- 1 1/2 Cups canned black beans or soaked black beans
- 1 1/2 Tablespoons cacao powder
- 1/4 Cup oats
- 1/4 teaspoon salt
- 1/3 Cup honey or maple syrup
- 1/4 Cup coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 2/3 Cups vegan chocolate (cut fine or chips)
- 1/2 teaspoon cinnamon
- Half a cup walnuts
Directions:
- Preheat the oven to 350F
- In a food processor or blender, add the black beans, cacao powder, oatmeal, salt, honey, coconut oil, vanilla, and baking powder, and mix very well. You can add up to 2 teaspoons of water to the mixture in order to assist with the blending.
- Stir in half of the chocolate and mix it again.
- Line an 8x5-inch oven dish with baking paper and pour in the brownie mixture.
- Sprinkle over the crushed walnuts and cinnamon.
- Bake for 25 minutes. Once it has baked, let it cool down completely before cutting.
- Once cooled down, melt the remaining chocolate and gently pour it over the brownies.
- Leave brownies in the fridge for 2 hours before eating.
