VEGAN PUMPKIN FRITTERS

Ingredients

For the Fritters:

2 cups smashed pumpkin (for this recipe, we used butternut)
1 cup all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 flaxseed egg (1 tbsp ground flaxseeds mixed with 3 tbsp water - let it sit for 10 minutes)
3 cups cooking oil of choice

For the glaze:

2 tsp butter
3/4 cup white or granulated cane juice sugar
pinch of salt
1 cup coconut milk
2 tsp cornstarch
3 tbsp water

Instructions

  1. Cook the butternut in boiling water until soft. Let it cool down completely before the next step.
  2. In a large mixing bowl, add the smashed butternut, flour, baking powder, salt, and flaxseed egg, and mix until combined.
  3. Add the cooking oil to a pot and heat until it reaches between 350°F and 375°F. To check if the oil is ready, add some batter to the oil. Once it turns brown and crispy, you know the oil is ready.
  4. Gently add the batter to the oil in tablespoons. Turn the fritters over after about 1.5 minutes. They should take about 3 to 4 minutes to cook through.
  5. To prepare the sauce, add the butter and sugar to a pan and heat until the butter has melted.
  6. Add the coconut milk and salt, and stir.
  7. Mix the cornstarch with water and add it to the sugar mixture to thicken.
  8. Once it has thickened, pour it over the warm fritters and enjoy!
