Avocado Salad Recipe

This week in the blog post we talked about how to relieve stress in healthy ways. 

Did you know that eating the right foods can help reduce stress? 

Certain foods, like chamomile tea, nuts, spinach, red pepper, and others can really help us keep our stress levels low. 

Avocados are also a good stress relieving food. They are rich in B vitamins and heart-healthy fat that may help to lessen anxiety. 

This simple avocado salad is a great pick for those more stressful days! 

 

Ingredients

  • 1 english cucumber
  • 4 roma tomatoes
  • 3 ripe avocados
  • 1/2 red onion
  • 1/4 cup fresh chopped cilantro
  • 1 lemon
  • salt & pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 1 mango (optional) 

 

Directions

1.Chop up the cucumber, tomatoes, cilantro, and onion.

2.Cut the avocado and mango into cubes (or desired shape), being careful of the pit.

3.Add all of the ingredients to a large salad bowl.

4.Toss with olive oil, lemon juice, salt and pepper.

5.Serve and enjoy!
