Easy, Cheezy, Vegan Potato Soup

Let's make one of America's favorite comfort dishes, creamy vegan potato cheese soup. Now if this is one of your favorites, you're in for a treat!

So what to do if you're following a vegan diet? How do you get the cheesy flavor without actual cheese??

CHEEZY VEGAN POTATO SOUP
Ingredients:

  • 4 to 5 medium-sized potatoes
  • 1 1/4 cup Instant Vegan Cheez Mix
  • 1 can unsweetened coconut milk
  • 1/2 tsp. salt
  • a drizzle of olive oil
  • sprinkle of dried chives

Directions:

  1. Wash, cube, and boil the potatoes in salt water.
  2. Cook until fork tender, then strain them.
  3. Add the coconut milk to the boiled potatoes and set it aside.
  4. Prepare the instant cheez mix according to the instructions.
  5. When done, add the cheez sauce to the potatoes and blend it all together with an immersion blender.
  6. Drizzle with some olive oil, add a sprinkle of chives, and add extra salt if needed, and stir it into the soup.
  7. You can also add extra water if you desire a runnier consistency.
  8. Enjoy!
