HOMEMADE GRANOLA BARS
Ingredients:
- 2 Cups Oats
- 1 Cup Mixed Nuts (Walnuts and Pecans)
- 1/4 Cup Pumpkin Seeds
- 1/4 Cup Sunflower Seeds
- 1/4 Cup Dried Apricots (finely chopped)
- 1 Cup Unsalted Creamy Peanut Butter
- 1/2 Cup Honey
- 1 Teaspoon Vanilla Essence
- Zest from half an Orange
Directions:
1. In a bowl, add the oatmeal, mixed nuts, and seeds.
2. Toast the mixture in the oven for 10 minutes at 375 F (Stir mixture after 5 minutes)
3. On the stovetop, warm up the peanut butter, honey, vanilla essence, and orange zest.
4. Once the mixture is warm (it takes about 3 to 4 minutes), add it to the toasted oatmeal mixture along with the dried apricots.
5. Mix well and add the mixture to a lined baking pan. Press down firmly to ensure the mixture is compact.
6. Bake in the oven at 360 F for 12 to 15 minutes.
7. Allow the mixture to cool completely before cutting into bars.
