Festive Ratatouille Recipe
Ingredients
- 1 large aubergine
- 2 medium zucchinis
- 6 medium tomatoes
- 1 large onion (chopped)
- 1 green bell pepper (chopped)
- 1 yellow bell pepper (chopped)
- 4 garlic cloves (chopped)
- 1 can chopped tomatoes
- Fresh basil
- 1 tbsp soy sauce
- Italian seasoning
- Salt
- 1 tbsp olive oil
Instructions
- Preheat the oven to 370°F.
- In a large saucepan, add the olive oil and sauté the onion, garlic, green pepper, and yellow pepper.
- Add the soy sauce, salt, herbs, and canned tomatoes, and gently simmer for about 20 minutes on low heat.
- Place the sauce in a round oven dish. Slice the aubergine, tomato, and zucchini into thin slices, then arrange them in a circular pattern in the sauce.
- Place in the oven and cover with parchment paper. Bake for 45 minutes, then remove the parchment paper and bake for another 10 minutes.

- 1 can red kidney beans
- 1 tsp Country Life BBQ seasoning
- half a cup soy fines (presoaked)
- 2 tbsp oat bran
- 1 tbsp Italian seasoning
- tsp ground paprika or red pepper flakes
- 1 tsp liquid smoke
- half a cup toasted breadcrumbs
- 1 can of chopped tomatoes
Instructions
- In a bowl, add the kidney beans and, using a fork, gently mash until fine.
- Add the remaining ingredients and mix thoroughly.
- Using your hands, form round meatballs and coat them with breadcrumbs.
- Place them in a frying pan on medium heat and fry for about 15 minutes.
- Add the canned tomatoes and allow to cook for another 15 minutes.
- Serve with the ratatouille and enjoy!
