EASY VEGETABLE VEGAN GRAVY
Ingredients:
- 1 onion
- 1.5 cups mushrooms
- 1 carrot
- 4-6 cloves of garlic
- 4 Tablespoons all-purpose flour
- Boiled water as needed
- Not Chicken Seasoning
- Herbed sea salt
- Cayenne pepper (optional)
- Rosemary (optional)
- Pinch of cumin (optional)
Directions:
- Chop all your veggies roughly.
- Saute the onions and mushrooms for a few minutes, then add the carrots and cook for an extra few minutes.
- Add the chopped garlic and let the vegetables cook down most of the water content until it starts to caramelize and get a bit "sticky" on the bottom.
- Scoop out the mixture into a bowl.
- In the same pot, turn the heat down and add olive oil.
- Add 4 heaped tablespoons of flour and mix the oil and flour with a whisk to form dough-like clumps. You can add some extra oil if it seems to dry to mix. Let it brown for about 5 minutes.
- Little by little, slowly add boiled water and keep whisking until the clumps start to dissolve and you have quite a runny consistency.
- Add the Not Chicken Seasoning and herbed sea salt and mix.
- Add the cayenne pepper, rosemary, and cumin and mix.
- Bring the mixture to a boil and add about half of the cooked vegetables and let it simmer for a few minutes.
- With an immersion blender, blend the gravy until you get a smooth gravy. You can add more water depending on your desired consistency.
- We added some extra thyme and oregano just for added herb flavor! Give it another good whisk to mix the herbs in.
- A squeeze of half a lemon and a splash of honey will balance all the flavors and your gravy is ready to be used!
