Vegan Chocolate Truffles Recipe

Ingredients

Suggested toppings: Coconut flakes, dried strawberries, and crushed biscuits. 

Instructions

  1. Add the chickpeas, carob powder, dates, peanut butter, and 2 tablespoons of coconut oil to a blender with the water. Blend until smooth and buttery. If needed, add more water. 
  2. Place the mixture in the fridge for 1 hour. 
  3. On a double boiler, melt the vegan chocolate with 1 teaspoon of coconut oil. Stir continuously until it has all melted. 
  4. With a teaspoon, take some of the chickpea mixture and gently roll it into small balls.
  5. After rolling a ball, gently dip it into the melted chocolate and set it aside. 
  6. Let the balls set in the fridge for at least 1 hour before serving.
  7. Suggested toppings: Add dried strawberries, coconut flakes, or crushed biscuits.
