Beetroot Waffles Recipe
Ingredients
- 1 cup all-purpose flour
- 1 cup tapioca flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup oat milk
- 2 tsp organic apple cider vinegar
- 2 small beets (cooked)
- 2 flaxseed eggs (2 tbsp ground flaxseed + 6 tbsp water)
- 1/4 cup honey
- 1/4 cup olive oil
- 1 tsp vanilla extract

Instructions
- Lightly spray and preheat a waffle iron.
- In a blender, combine the oat milk, cooked beetroot, and apple cider vinegar until smooth.
- Add the flaxseed eggs, honey, olive oil, and vanilla essence and blend for another 2-3 minutes.
- In a mixing bowl, combine all of the dry ingredients. Add the wet ingredients and gently stir until combined.
- Pour into your waffle iron and cook for approximately 4-6 minutes, until the waffles are cooked through and slightly crispy on the outside. Enjoy with toppings of your choice!
Recipe Notes:
- Prefer gluten-free? Swap the all-purpose flour for any gluten-free flour of your choice. Consider if your chosen flour needs more or less moisture.
- You can skip the tapioca flour and use two cups of all-purpose flour.
- You can make these waffles non-vegan by using two regular eggs.
- Why apple cider vinegar? The mild acidity reacts with the baking powder, helping the waffles rise better. It also creates lighter, fluffier waffles with a softer interior, instead of something dense or gummy. You can omit the vinegar, but the waffles won’t be quite as light, balanced, or bakery-good.
