SWEET LEMON LOAF
Ingredients:
For the loaf:
- 2 cups white flour
- 3/4 cup white sugar or similar sugar alternative of your choice (another substitute may affect the final outcome)
- 1 tablespoon baking powder
- 1/2 teaspoon of salt
- Zest of 1 lemon
- 1 and 1/2 cups thick coconut milk
- 1/2 teaspoon of vanilla essence or flavor
- 2 tablespoons fresh or bottled lemon juice
For the glaze:
- 1/4 cup water
- 1 tablespoon lemon juice
- 3/4 cup powdered sugar
Directions:
- Set the oven to 350F.
- In a bowl, add all of the dry ingredients and mix with a wooden spoon.
- Add the lemon zest and remaining ingredients and mix well.
- Place in a 9-inch baking pan and bake in the oven for 40 minutes.
- When the loaf is done, mix the glaze and pour it over the loaf while it is still warm.
