Ingredients:
- 1.7 ounces Vege Shreds (Dark)
- 1/2 a cup of water
- 8 ounces tortilla chips
- 1 large onion
- 5 large tomatoes
- 5 sprigs fresh coriander
- 2 green chillies
- 3 garlic cloves
- 1 Tbsp olive oil
- pinch of salt
- Lemon juice (half a lemon)
- 1/2 a tsp of cumin
- 1/2 a tsp of coriander
- 1/2 a tsp of smoked paprika
- 1 Tbsp Country Life BBQ Seasoning
- 1 tsp liquid smoke
- Country Life Instant Cheez mix
- Extra toppings: Red jalapenos, guacamole, and fresh coriander leaves
Instructions:
- To make the sauce, finely chop and mix the onion, tomatoes, fresh coriander, chilies, and garlic in a pot on the stove. Add some olive oil, salt, and the juice from half a lemon. Cook on the stove until soft.
- Place 1.7 ounces of Vege Shreds in a bowl with half a cup of water and leave for a couple of minutes to soak.
- Place the soaked Vege shreds into a pan along with the cumin, coriander, smoked paprika, and liquid smoke. Add some oil and gently fry for 5 to 10 minutes.
- Mix Country Life Cheez Mix according to package instructions to make one batch.
- Use a large plate and add the tortilla chips to it; next, add the tomato sauce as well as the Vege shreds. Top it off with the cheese sauce and serve with red jalapenos, guacamole, and fresh coriander.
