Delicious Vegan Blueberry Crisp

Summer is the best time for fresh fruit, and there are so many things you can do with it! I love picking fresh blueberries, and this recipe is perfect for a nice dessert! 

So grab some fresh blueberries or some frozen, and make some deliciousness! 


Maple Oat Topping:

  • 3/4 cup quick oats
  • 1/3 cup unbleached flour
  • 1/2 tsp ground cinnamon
  • pinch of salt 
  • 1/4 c. Turbinado or brown sugar
  • 1/2 tsp vanilla 
  • 2 tbsp maple syrup
  • 1/4 cup cold vegan butter (Earth Balance butter works great!) 

Blueberry Filling: 

  • 4 cups frozen blueberries
  • 3 tbsp Old Orchard Berry Blend Juice Concentrate
  • 1/2 tsp vanilla
  • 2 tbsp cornstarch 
  • 1/4 cup cold water



1.Mix the dry ingredients for the maple oat topping together in a medium sized mixing bowl.

2.Add the wet ingredients and mix well. 

3.Crumble together until there are large pea size crumbles. Set aside. 

4.In a small saucepan add the blueberries, juice concentrate, and vanilla. 

5.Once warmed through and the berries are softened, mix together the cornstarch and warm water. 

6.After mixed, drizzle it into the bowl and whisk constantly to avoid clumps. 

7.Once thickened to a thick sauce pour it into a 9x7 casserole dish and top with the maple oat topping.
