Why does natural peanut butter separate?

Because nothing is added to stop it. Without hydrogenated oils, the natural oil rises to the top of the jar. Once Again recommends stirring it back in with a metal utensil, and warming the jar slightly makes stirring easier. To slow separation, stir well and then refrigerate the jar.
