MOROCCAN CARROT & LENTIL SALAD
INGREDIENTS:
FOR THE SALAD:
- 1 cup cooked lentils
- 2 carrots (peeled and grated)
- 1 celery stick
- 1/4 cup diced red onions
- 1/4 cup chopped fresh mint leaves
- 1/4 cup chopped any mixed nuts
- Handful of sunflower seeds
FOR THE DRESSING:
- 3 tablespoons lemon juice
- 1/4 cup extra-virgin olive oil
- 1 garlic clove (minced)
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon turmeric
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1 teaspoon dijon mustard
- 1 tablespoon honey
Simply omit any spices you don't have; you will still end up with a delicious dressing!
DIRECTIONS:
- Cook your preferred lentils according to the instructions and let them cool a bit.
- Mix all the dressing ingredients together in a jar with a lid. Shake vigourously and set aside.
- Add all the salad ingredients to a bowl and mix.
- Top with desired amount of the dressing and give it another stir-through.
- Serve in bowls, top with some mint, and enjoy!
