Crunchy Spring Rolls
INGREDIENTS:
For the dip:
- Half a cup of smooth peanut butter
- 1 Tablespoon of soy sauce
- Juice of 1 lime
- Half a cup of water
- 2 Tablespoons honey
For the spring rolls (makes 6):
- 6 Rice paper sheets
- 1 Stem of spring onion
- Half a medium carrot
- Half a sweet red pepper
- 1/3 of a cucumber
- Half an avocado
- 1 Cup of red cabbage
- 1 Cup Mixed lettuce leaves
- Fresh coriander
- 6 Tablespoons of Edamame beans
DIRECTIONS:
- For the peanut dip, mix the peanut butter, soy sauce, lime juice, water and honey very well. (Use a blender if needed). Set aside.
- Prepare the raw veggies by slicing them into thin slices according to the length of the rice paper sheets you are using. The recipe uses 7-inch rice paper sheets, therefore, the veggies were cut into lengths of roughly 5 inches.
- Soak 1 rice paper sheet in water for about 2 minutes.
- Place the soaked sheet on a large plate and add some mixed lettuce and fresh coriander leaves.
- Add the remaining veggies as well as 1 tablespoon of edamame beans.
- Fold the edge closest to you up and over the filling; fold in the sides first and complete the turn of the roll.
- Repeat steps 4–6 until you have used all of the ingredients.
- Cut the rolls in half and enjoy it with the peanut dipping sauce.
