A tiny grain native to Ethiopia, the teff grain is pack with substantial nutritional weight! A naturally gluten-free grain, it's full of protein and a mild nutty flavor. You can use teff as you would any other grain but the teff-to-liquid ratio is a bit different. A 1:1 ratio of teff to liquid keeps the seeds intact and al dente, perfect for use as a sprinkle on top of oatmeal, muffins, soup, steamed vegetables or just about anywhere you want to add a healthy little crunch. Teff grain is most popularly used to make a flatbread called injera. For a creamier dish, such as breakfast porridge, increase the amount of liquid to 1:4.
