Ingredients
Soy fines (textured non-GMO soybeans), chickpea flour, onion dices, shiitake mushroom powder, tomato powder, nutritional yeast, coconut sugar, real salt, paprika, granulated garlic, oregano, cayenne pepper
How to prepare
Preheat your oven to 375⁰F. Place the contents of the bag in a large bowl and mix with 2.5 cups of boiling water. Stir well to combine and let stand for 5 minutes. Prepare a loaf pan by lining it with parchment paper or spraying it with cooking spray. Add meatloaf mixture to loaf pan and smooth the top. Cover the loaf pan and bake for 45 minutes. Remove from oven and let cool for 10-15 minutes before slicing and serving.
May make ahead and reheat as needed.
Optional: Spread ¼ cup of your favorite ketchup or barbeque sauce over the loaf before baking, and another ¼ cup after baking.

To Make Meatballs:
Shape into 1 in meatballs
Place on oiled or parchment covered baking sheet
Bake 20-25 min at 275
