Wheat Berry Chili Recipe
Ingredients
- 2 Tbsp olive oil
- 1 red onion
- 1 large carrot
- 1 tsp fresh chili
- 3 garlic cloves
- 2 tsp chilli powder
- 1 1/2 tsp cumin powder
- 1 tsp dried oregano
- 1 tsp salt
- 1 can or 1 cup of dried black beans (pre-soaked)
- 1 can of diced tomatoes
- 2 cups golden wheat berries
- 1 cup Butler soy fines
- 3 cups vegetable stock
- 1 avocado (optional)
- fresh cilantro leaves (optional)
Instructions
- Add 2 cups of stock to a pot along with the wheat berries and cook until soft (about 40 minutes)
- Finely chop the onion, carrot, garlic, and chili and add it to another pot with the olive oil.
- Add the chili and cumin powder and dried oregano. Gently cook for about 10 minutes.
- Add the black beans, tomatoes, and presoaked Butler soy fines and mix well.
- Add 1 cup of vegetable stock along with the cooked wheat berries and simmer on low heat for about 30 minutes.
- Serve with some cooked rice with fresh avocado and cilantro leaves.
