Looking for a cozy, comforting meal that's packed with flavor, nourishing ingredients, and surprisingly easy to make? This Creamy Vegan Pumpkin and Chickpea Curry ticks all the boxes!
With tender chunks of pumpkin, hearty chickpeas, fresh spinach, and a rich, fragrant coconut curry sauce, this meal will warm you from the inside out.
Pumpkin's natural sweetness pairs beautifully with aromatic ginger, garlic, and warming curry spices, while creamy coconut milk brings it all together in a deliciously satisfying sauce. Chickpeas add plant-based protein and fiber, and a generous handful of fresh spinach adds a pop of green and an extra boost of goodness.
And the best part? It's a simple, one-pot meal made with everyday pantry staples, perfect for busy weeknights when you want something homemade without spending hours in the kitchen. It's also a great way to celebrate pumpkin season, though you can enjoy it any time of year!
Serve this creamy pumpkin curry over fluffy basmati rice, quinoa, or couscous, or pair it with warm naan bread to soak up every last drop of that delicious coconut sauce.
One important recipe note: If you're using dried chickpeas instead of canned, they need to be fully cooked before adding them to the curry. Soaking overnight alone isn't sufficient, as the short simmering time won't cook them through.
Pumpkin and Chickpea Vegan Curry Recipe
- Servings: 4
- Prep Time: 10 minutes
- Cook Time: 15-20 minutes
- Total Time: 30 minutes
Ingredients
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 teaspoon freshly grated ginger (or ½ teaspoon ground ginger)
- 1 medium white onion, diced
- 1 tablespoon yellow curry powder
- ½ teaspoon ground paprika
- 1¼ pounds (20 oz) pumpkin, cut into cubes
- 5 ounces fresh spinach
- 1 (14–15 oz) can chickpeas, drained and rinsed or dry chickpeas soaked overnight and pre-cooked.
- 1 (13.5 oz) can full-fat coconut cream or milk
- Salt to taste
Instructions
- Heat olive oil in a large skillet or pot. Add the onion and garlic and sauté for 3–4 minutes until the onion becomes soft and translucent.
- Stir in the pumpkin and cook for about 3–5 minutes, stirring occasionally to lightly sauté the pumpkin and combine it with the onion and garlic.
- Add the ginger, curry powder, and paprika. Stir well to coat the pumpkin evenly, allowing the spices to release their aromas for about 1 minute.
- Add the coconut milk and stir until everything is well combined. Bring the mixture to a gentle simmer, cover, and cook over medium-low heat for approximately 10 minutes, or until the pumpkin is tender. Stir occasionally, adding a splash of water if the sauce becomes too thick.
- Stir in the chickpeas and simmer for another 3–5 minutes. Add the spinach and gently fold it into the curry until wilted.
- Season with salt to taste. Serve warm with your favorite starch, such as fluffy basmati rice, quinoa, couscous, or warm naan bread.
